4 tablespoons Butter (1/2 stick)
4 tablespoons Flour
1 3/4 cups Milk (room temperature)
3/4 teaspoon Salt
1/4 teaspoon Pepper
1/8 teaspoon Cayenne pepper
1/2 cup grated Parmesan cheese
Directions
In a medium sauce pan, melt butter (or margarine), over moderate-low heat.
Stir in flour and cook 1 minute,
Whisk in milk.
Increase heat to moderate-high and cook - whisking
constantly until mixture comes to a boil and thickens.
Remove from heat and stir in seasonings and cheese.
Cover and refrigerate.
