2 packages frozen Artichokes -- (9oz ea.)
2 tablespoons Honey
2 tablespoons Vegetable Oil
1/4 cup Shallots -- minced
1/2 cup Parsley -- chopped
Directions:
In a large pot, bring a quart of water to boil with the honey, lemon juice and oil. Add the artichokes and cook, covered for about 8 minutes (you don't need to defrost them before
cooking)
Transfer the artichokes to a serving bowl with a slotted spoon.
Mix in the shallots.
Reduce the cooking liquid to a syrup. You should have about 1/2 cup. Pour over the artichokes.
Let cool
to room temperature, sprinkle with parsley and serve.
