    Ingredients

      4 Chicken breasts, minced*
      3 tablespoons Butter
      1 cup finely chopped Red pepper
      6 Shallots, minced
      2 cups Bread crumbs
      2 beaten Eggs
      1/2 cup Cream or Milk
      2 tablespoons Dijon mustard
      2 tablespoons minced fresh Herbs
      Salt & pepper -- to taste
      * I prefer to mince my own chicken as I can ensure that I am only getting meat with no  fat. I am sure, however, that any reliable butcher will do it for you. This dish is  equally good with all dark meat or a mixture of both!

    Directions

    Sauté red peppers and shallots over med.- high heat and cook until tender - about 5 or  6 minutes. Put in bowl. Add chicken, crumbs, eggs, cream, mustard, herbs, salt and pepper Chill at least 1 hour or as long as overnight. Preheat oven to 400o. Shape chicken mixture into small patties for appetizers, larger ones for dinner parties. Heat about 2 tablespoons oil in a sauté pan and sauté, turning once, until golden.  (about 4 minutes total cooking time). Drain on paper towels and transfer to baking sheet. Bake for another 6 - 8 minutes. Serve hot or cold.
