1 pound lean ground beef
1/2 teaspoon salt
2 teaspoons cracked pepper
1 tablespoon butter
2 tablespoons minced shallots
1/4 cup dry red wine
1/4 cup beef broth
2 tablespoons chopped parsley
Directions:
Heat heavy skillet over moderate heat 5 minutes. Meanwhile combine ground beef and salt, mixing lightly but thoroughly. Shape into 4 oval patties, 1/2 inch thick. Lightly press
pepper into both sides. Place patties in skillet and cook 6 minutes. Pour off drippings. Turn patties and continue cooking 6 minutes or until desired doneness. Remove to warm platter. Pour off drippings.
Cook shallot in butter 1 to 2 minutes, stirring constantly. Add wine and broth and cook, stirring over high heat until reduced by half. Return patties to pan and cook 1 to 2 minutes. Sprinkle parsley
over patties.
