    Ingredients:

      8oz. Tuna filets
      2 tablespoons melted butter
      4 tablespoons blackening spice mix
      2 teaspoons Wasabi paste
      Soy sauce
      Pickled ginger
       

    Directions:

    In a well-ventilated kitchen heat a dry cast iron skillet over high heat for 10 minutes  or until the pan turns white. Roll the tuna steaks in the melted butter and then coat the  fish with the blackening spice mixture. Place the tuna in the skillet and sear for 1-2  minutes. (This process could produce a lot of smoke. If you have a kitchen fan use it!)  Repeat with all sides of the tuna. Remove from the skillet and slice the tuna against the  grain into 4-5 pieces. On two plates spread the tuna out in a fan shape and garnish with a  teaspoon of wasabi, a pinch of pickled ginger and a small bowl of soy sauce.
