Recipe by: Phil Eaton Any Son of Texas knows chili ain't sweet, and you don't cook no beans with your chili. You can slop the chili over some
pintos, or blacks, but they don't never cook in no pot together!!
Ingredients:
2 T veg oil (some o' them healthy food folks like canola) 3 lb. coarse ground beef (can sub in a little ground pork if you want) 2 med. onions, chopped (dice is something you throw against the wall for
money) 28 oz can whole tomatoes 12 oz good beer (like them metzican beers!) 6T chili powder 2 hawlapeenyo chiles, roasted, peeled & chopped (seeded if your lil' tummy's tender)
1 T comino (cumin, gringo!) 1 T paprika 1 t sugar (for them Cincinnati folks) 1 t cayenne pepper salt & pepper as you like it....
Directions: Heat oil in the pot, add the ground beef and brown a little. Add the onions and garlic and sauté until meat is thoroughly browned. Stir in tomatoes, beer, chili powder,
hawlapeenyos, cumin, paprika and sugar. Bring to a boil over medium high heat. Reduce heat to medium-low and simmer, uncovered, 45-55 minutes. Season with salt, pepper, and cayenne. Serve with onions,
cheese, and beer, and STEP ASIDE.
