Recipe by Joan Billard

    Ingredients:

      3 lbs. of lean stewing beef
      4 chorizo sausages removed from skins (optional).  If using, brown with stewing beef  before adding other ingredients. 
      2 medium onion finely chopped
      1 tablespoon minced garlic
      8 tablespoons of oil
      1 15 oz. can of tomato sauce
      1/2 cup chili powder
      1 can of beef broth or consommé
      1/2 cup red wine
      1 tablespoon ground cumin
      1 tablespoon salt
      1 tablespoon vinegar
      1 teaspoon oregano
      1 teaspoon pepper
      1/2 teaspoon cayenne pepper
      1/2 teaspoon hot pepper sauce
      1/4 cup brown sugar
      2 cups diced tomatoes
      2 stalks finely chopped celery
      1 small bell pepper finely chopped
      1 large carrot finely chopped
      2 teaspoons liquid smoke
      2 oz. of chocolate (Mexican preferred).
      1 large can of black or kidney beans may also be added if you prefer.  Drain and  rinse beans before adding to pot.   

    Directions:

    Brown meat in oil.  Add rest of ingredients and mix.  Bring to a boil  then simmer for 2 hours until meat is tender.   Serve in deep bowls with a drizzle of  sour cream on top accompanied with fresh white bread or corn bread.
