Ingredients:
1/3 cup oil 1 cup sugar 1 tablespoon vanilla 1 egg 2 1/2 cups all-purpose flour 3/4 teaspoon salt 1/2 teaspoon baking soda 1/4 cup skim milk
Directions: Heat oven to 400 degrees F. Oil baking sheets lightly. Combine oil, sugar, and vanilla in large bowl. Add egg. Beat at medium speed of electric mixer until blended. Stir in flour,
salt, and baking soda until mixture is smooth. Blend in milk. Drop by teaspoonfuls onto baking sheets. Flatten cookies with bottom of glass lightly oiled and dipped in granulated sugar. (Use colored
sugar for holiday cookies). Bake at 400 degrees F. for 6 to 8 minutes or until barely browned around edges. Avoid overbaking. Remove to cooling rack.
Variations: Rolled Cookies: Chill dough 1 hour or longer. Roll out on lightly floured surface. Cut into desired shapes. Bake as above. Slice and Bake Cookies: Shape dough into rolls. Wrap in plastic wrap or
foil. Freeze several hours or overnight. Slice. Bake as above. |
