1/2 cup shortening
1 cup honey
2 eggs
1 teaspoon vanilla
1 3/4 cups whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
2 cups quick-cooking oats
1/2 cup chopped nuts
1/2 cup finely chopped apples
1 cup seedless raisins
Directions:
In large mixing bowl, cream shortening and honey until fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. In medium bowl, stir together flour,
soda, baking powder, salt and cinnamon. Add dry ingredients to honey mixture beating until smooth. Stir in oats, nuts, apple and raisins. Drop by teaspoonfuls onto greased cookie sheets about 2 inches
apart. Bake at 350 degrees F 10 to 12 minutes or until cookies are golden brown.
