    Ingredients

      1 1/4 cups toasted, ground Almonds
      7 Eggs -- separated
      1 cup Sugar
      1 tablespoon Lemon Juice
      3 Bananas -- mashed
      1/2 teaspoon Salt
      1 teaspoon grated Lemon Peel
      3/4 cup Potato Flour
       

    Directions

    Preheat the oven to 350.
    Lightly grease a 10 x 3-1/2 " tube pan or 10" springform pan with vegetable oil  and dust with some ground almonds.
    Beat the egg yolks until they are thin and pale. Add the sugar and lemon juice and beat  for another 5 minutes.
    Stir in the bananas, lemon peel, almonds and sifted potato flour.
    Beat for 2 minutes.
    Beat the egg whites until they hold stiff peaks. Fold them gently into your batter.
    Pour the mixture into your prepared pan.
    Bake for 30-40 minutes, or until a skewer comes out clean.
    Let cool (don't worry it will sink & shrink this is normal)
    Remove from pan and serve.
