* As each filling is enough for 1/2 of your brioche dough why not make 2 types?!

Cinnamon Sticky Bun Filling

    Ingredients

      1 cup Walnuts -- chopped
      3/4 cup Brown Sugar
      1 teaspoon Cinnamon
      1/8 teaspoon Salt
      1 1/2 cups Raisins
      1 tablespoon Flour
      1 tablespoon Corn Syrup
      Syrup:
      1/2 cup Sugar
      3 tablespoons Water
      4 ounces Butter
       

    Directions

    Filling:
    Combine walnuts, brown sugar, cinnamon, salt in a bowl. Chop the raisins with the flour  and add. Pour the corn syrup in and mix well.
    Syrup:
    Simmer the sugar and water in a small saucepan, mixing until the sugar is dissolved and  the mixture is clear. Cut the butter into pieces and add to the pot and boil until it  reduces and becomes sticky. Warm briefly before using.
    Pour over the sticky buns when they come out of the oven.
     

Chocolate Sticky Bun Filling

    Ingredients

      1 cup Walnuts -- chopped
      1/4 cup Brown Sugar
      1 teaspoon Cocoa Powder
      1/8 teaspoon Salt
      1 1/2 cups Semi-sweet Chocolate - chopped
      1 tablespoon Corn Syrup
       

    Directions

    Filling:
    Combine walnuts, brown sugar, cocoa, salt and chocolate in a bowl. Pour the corn syrup in  and mix well.
    Syrup:
    Use the same syrup as for the Cinnamon Sticky Bun Filling
