Ingredients:
2 pounds fresh or frozen squid, cleaned, cut in rings 1 onion, chopped fine 2 tablespoons minced pimientos 2 large celery stalks 1 garlic clove, chopped or crushed
1/4 cup Italian salad dressing
Directions:Bring water to boil; add cut squid and simmer until it turns opaque (about 2 minutes). Drain into colander, rinse with cold water. Place
cooked squid into a bowl, add onion, pimento, celery, garlic and Italian dressing to taste. Chill thoroughly before serving. Serve on bed of lettuce or as a topping for crackers. 8 Servings
